Grilled Pesto Caprese

This quick, delicious, vegetarian-friendly dish can be put together from start to finish in as little as 15 minutes.

4 Servings

  • 1 Medium Shallot, sliced
  • 12 Half Inch Slices Organic Medium Tomatoes
  • ½ Cup Favorite Pesto
  • 2 Tbs EVOO
  • ½ Pound Fresh Mozzarella Balls, small cherry size “chiliegini”
  • ½ Cup Favorite Pitted Olives (I used Kalamata)
  • Salt & Pepper
  • 1 Ready. Chef. Go!® Oven and Grilling Bag

Peel and slice the shallot. Core and peel the tomatoes, then cut into ½ inch slices. Trim a thin slice off the bottom so the slices will all sit well in the bag. Load tomatoes into the bag in a single layer. Top with shallots. Stir the oil with the pesto and top the tomatoes and shallot. Add the mozzarella and olives, then sprinkle on salt and pepper. Seal the Ready. Chef. Go!® bag.

COOKING INSTRUCTIONS: BBQ over indirect heat or roast in the oven at 450°F for 10 to 12 mins until the cheese is gooey.

Garnish with fresh herbs and fresh citrus wedges.
