Pot Roast for Two

This delicious, easy-to-make pot roast is the perfect meal for two.

Serves 2 

  • 1 Pound Beef, 2-inch pieces (chuck, round, brisket)
  • 1 Cup Vegetable Juice (medium thickness)
  • 1 1/2 Tablespoon Favorite Salt & Spice Blend (Used Everson California Garlic Medley)
  • 2 Oz Shallots or Baby Onions
  • 1 Pound Baby Potatoes (Used baby red potatoes)
  • 1/2 Pound Rainbow Carrots, roll cut
  • 1 Rib Celery, sliced
  • Garnish: Citrus, Scallions, and Fresh Herbs
  • 1 Ready. Chef. Go!® Microwave and Oven Bag

    Toss the cubed beef, vegetable juice, and spice blend together and set aside while you prep the vegetables. Roll cut the rainbow carrots for the best-cooked texture and premium presentation (see video how-to). Load the carrots, whole baby potatoes, celery, and shallots (cut in half if large) or baby onions into the cooking bag. Add in the marinated meat mix and shake to combine. It’s ok if the meat is mostly as the top and the vegetables below. This makes for testing doneness easier at the end. Seal the bag and cook in microwave or oven.   

    MICROWAVE INSTRUCTIONS: Microwave on power level 8 for 20 minutes, then shake the bag and cook for 5 minutes longer. 

    OVEN INSTRUCTIONS: Roast in an oven at 450 for 45 minutes until beef is fully cooked and tender

    Let rest for 5 minutes before opening the bag. Garnish with citrus wedges, scallion slices, and fresh herbs.  

    NOTE: Ready. Chef. Go! bags allow for excellent texture in the microwave & fast high heat cooking in the oven. The results are always succulent and tender. You’ll taste the difference. Here’s an important pot roast cooking hack: Cut the beef into 2-inch pieces before loading into the bag to reduce cooking time by two thirds.
